Charoset Yemenite Recipe

Ingredients:
1 cup pitted, chopped dates
1/2 cup chopped dried figs
1/3 cup sweet Passover wine
3 tbsp. sesame seeds
1 tsp. ground ginger
pinch of coriander
1 small red chili pepper, seeded and minced, or a pinch of cayenne
2 tbsp matzo meal

Method:
In a large bowl, combine the dates, figs, and wine. Add the sesame seeds, ginger, coriander, chili pepper, and matzo meal and blend thoroughly. Roll into 1″ balls or serve in a bowl.

Charoset Sephardic Recipe

Ingredients:
1 cup dates
1 cup raisins
1/2 cup coarsely chopped walnuts
Kiddush wine, enough to moisten mixture, about 1/4 cup or so.

Method:
Chop all the solid ingredients together in a chopping bowl (or food processor; don’t tell anyone I wrote this!), moisten with wine until a smooth consistency has been reached.
Chill until ready to serve.

Charoset Moroccan Recipe

Ingredients:
500g (about 1 lb.) hazelnuts
250g (about 1/2 lb.) almonds
250g (about 1/2 lb.) dates
250g (about 1/2 lb.) sultana raisins

Method:

Using a food processor, grind the nuts together coarsely. Add dates and raisins and process until consistency is smooth but still has some texture.
Prepare balls of the mixture about 2cm (1″) in diameter. Can also be served as a dessert during Pesach.

Charoset Israeli Recipe

Ingredients:
2 apples peeled, cored and chopped
3 bananas chopped
juice and peel of 1/2 lemon
juice and peel of 1/2 orange
15 dates, pitted and chopped
1/2 cup ground walnuts
1 tsp. cinnamon
1/4 cup red kosher wine
3 tsp. matzo meal
sugar

Method:
Combine apples, bananas, lemon, and orange juices and peels, dates, and nuts in a bowl.
Add cinnamon, wine, and matzo meal and blend thoroughly. Add sugar to taste.
