Pesto Goat Cheese and Sundried Tomato Pizza Recipe

Ingredients:

8 each Taco Size Flour Tortillas
4 tsp. Olive Oil
2 cups Mozzarella Cheese grated
1 cup homemade or purchased Pesto sauce
8 each sundried Tomatoes packed in oil, cut into strips
4 oz. Goat Cheese
2 tsp. Pinenuts (optional)

Method:

Lay a tortilla down on an oiled baking pan. Lightly brush the tortilla with 1/8 cup of the pesto.  sprinkle 1/4 cup of the cheese over the pesto. Lay another tortilla over the pesto and cheese and repeat the procedure of pesto and cheese.

Arrange the sundried tomatoes, goat cheese and pinenuts (if desired) on the top tortilla over the pesto and cheese.
Repeat whole procedure with remaining tortillas and ingredients. Bake in 400 degree F. oven until crispy, about 10 minutes.

Indian Paneer Recipe

Paneer  Cheese or Chenna as its called. Easy to make cheese that is very healthy!

Ingredients:
Milk  5 cups
Yogurt 2 tsp.
Vinegar or lemon juice  1/2 tsp.

Method:
1.  Put the milk in a pan. Add the yogurt. Bring to boil.
2.  Reduce the heat. Add vinegar or lemon juice while continuously stirring the milk.
3.  Increase the heat. Keep stirring the milk till it curdles.
4.  Take the curdled milk off the heat. Keep it aside for 5 mins.
5.  Strain the curdled milk. Slightly squeeze the residue in the strainer so that almost all the milk whey is removed.
6.  Residue is called paneer (chenna).

Hummus Paste-Dip Recipe

Ingredients:
1 1/4 cup cooked chickpeas
3 tb tahini
3 tb lemon juice
2 small garlic cloves – optional
4 spoons chopped pasley – optional
1 ts cumin powder
1/2 ts paprika
1/2 ts salt
1/4 ts black pepper
2 to 3 tb water
olive oil

Method:
In a food processor  add the chickpeas and lemonAdd the cumin and minced garlic,add the tahini , add the salt and few table spoons of the humus waterabout 2-3
Blend everything together and check for the thickness,if you find it to be too thick add a little more of water. add parsley now if using. serve on plate with olive oil  or as dip.
